Ingredients

1 Millennium
Endive
4 cocktail tomatoes
Sherry vinegar
Olive oil
Dijon mustard
Salt and pepper
4 walnuts
200 grams shelled prawns
Preparation
· Cut Millennium in half; then make melon balls
· Keep rind to use later
· Clean prawns well and boil water
· Let them cool
· Keep two whole prawns to decorate; cut others into small pieces
· Slice tomatoes.
· Fill empty Millennium rinds with endive, Millennium balls, tomatoes and cut up prawns.
· Dress with vinaigrette.
Vinaigrette
· Finely chop walnuts and mix with a small spoonful of Dijon mustard
· Gradually add 3 small spoonfuls of oil, mixing constantly.
· Add a small spoonful of vinegar
· Salt and pepper to taste.
